Petroselinum crispum is a bright green herb [0.02]

Hoje, a passear na rua enquanto fumava um cigarro nocturno, lembrei-me do cheiro e do sabor da Salsa. Apercebi-me o quanto gosto de salsa. E como gosto de polvilhar salsa fresca por cima dos melhores pratos. Apeteceu-me prender-te à cama e fazer-te esperar enquanto cortava aos pedacinhos um enorme ramo de salsa acabada de colher, polvilhar a salsa por cima do teu corpo nú, cheirar-te lentamente da cabeça aos pés. Fazer com que te regasses copiosamente com os teus próprios temperos. E depois, comer-te. Toda.

Les partisans de la nouvelle cuisine rejetant la complication des plats traditionnels difficiles à digérer, la simplicité est primordiale dans la nouvelle cuisine. Les plats ont été allégés. Les liaisons à base de farine ont été abandonnées au profit de sauces allégées à base de fines herbes, d’épices, de jus de viande, d’essences et d’infusions. Le résultat obtenu était un plat élégant mais simple au goût inaltéré.

Le respect de la saveur originelle des ingrédients se traduit par une cuisson rapide des légumes respectant l’intégrité de leur aspect et de leur texture.
La cuisson à la vapeur, en papillotes ou au bain-marie est privilégiée.

Pour la nouvelle cuisine, la nourriture se doit de stimuler chacun des cinq sens, particulièrement le visuel.



p.s.: le gingembre va très bien avec le persil
